---Crock Pot Sweet and Sour Red Cabbage with Apples--- This one will keep refrigerated for about 5 days and is also good served cold. 1 large head red cabbage, shredded (about 2-1/2 pounds) 3 apples, peeled, cored, and chopped 2 cups chopped onions 3 or 4 cloves minced garlic 1/3 cup red wine vinegar (or Balsamic vinegar, if you prefer) 3 TB water 3 TB granulated sugar 2 TB vegetable oil 1 bay leaf 1 tsp. salt 1/2 tsp. black pepper Combine all the ingredients in a 5 or 6 quart electric crock pot/slow cooker. Stir to combine well. Cover and cook on the LOW heat setting for about 6 hours, until the cabbage is tender. Remove and discard the bay leaf. Taste and add additional salt, pepper, and sugar if desired. Stir well and serve. Enjoy! Makes 6 to 8 servings
