Chicken Reuben Casserole

Ingredients

4 chicken breast halves, skinned and deboned

1/2 tsp. salt

1/4 tsp. ground black pepper

1 can (14.5 oz.) sauerkraut, drained

8 Deli corned beef slices

8 slices Swiss cheese

1-1/2 cups Thousand Island dressing

1 cup soft rye bread crumbs

2 TB butter or margarine, melted

1 TB chopped fresh parsley

Directions

1Sprinkle chicken with salt and pepper; place in a lightly greased 9" x 13" baking dish.

2Layer chicken evenly with sauerkraut, corned beef, and Swiss cheese. Pour dressing over top.

3Bake, uncovered at 350° F., for 35 to 40 minutes or until golden and bubbly.
