Crock Pot Sauerkraut Soup

Ingredients

  • Combine in a 5 quart crock pot/slow cooker and mix well:
  • 1 medium potato, cut into 1/4" cubes
  • 1 lb. smoked kielbasa, cut into 1/2" cubes
  • 1 can opr jar (32 oz.) sauerkraut, rinsed and drained
  • 4 cups chicken broth
  • 1 can (10-3/4 oz.) condensed cream of mushroom soup, undiluted
  • 1/2 lb. fresh mushrooms, sliced
  • 1 cup cubed cooked chicken
  • 2 medium carrots, peeled and cut into 1/4" slices
  • 2 celery ribs, sliced
  • 2 TB vinegar
  • 2 tsp. dried dill weed + 1/2 tsp. ground black pepper

Method

Step 1

Cover and cook on HIGH heat setting for 5 to 6 hours or until the vegetables are tender. Skim fat. Garnish individual servings with bacon. ~~~Garnish~~~ 3 to 4 bacon strips, sautéed and crumbled
