Crockpot Hungarian Beef Goulash

Ingredients

  • 2 medium onions, halved and sliced
  • 1-1/2 lb. boneless beef chuck or round steak, cut into 1" cubes
  • 4 tsp. paprika
  • 1/4 tsp. ground black pepper
  • 4 TB catsup
  • 3 TB water
  • 3/4 lb. small red potatoes, scrubbed and shredded

Method

Step 1

Add to a 3-1/2 quart crockpot, mix tegether well. Add on top: 1 can (14-1/2 oz.) sauerkraut, rinsed and drained well. Mix well, cover and cook on LOW heat setting for 8 hours, or until the beef is tender.

Step 2

Mix gently and stir in: 1/2 cup sour cream 1 tsp. caraway seeds (optional) Garnish with chopped parsley and serve.
