Frank’s Fresh Kraut Salad

The tastiest, most refreshing sauerkraut salad your will ever eat! This healthy recipe is satisfying and a real crowd pleaser.


Eight small red orange and yellow peppers

One medium sweet red onion

One medium sweet white or yellow onion

Three stalks of celery

Six scallions

One cup shredded carrots

One poly bag Frank’s two pound deli kraut

1/2 cup white granulated sugar or substitute your own choice of sweetener (Agave, for example)

1/2 cup Apple Cider Vinegar

1/2 cup vegetable or canola oil


1Clean and dice peppers into small strips or cubes

2Clean celery and dice into small cubes

3Clean and dice all onions

4Clean scallions and cut into small pieces

5Clean carrots, shred into strips to yield one cup Rinse Frank’s Kraut in a colander, set aside in separate bowl

6Combine all the vegetables together and mix thoroughly.

7Add to the Frank’s Kraut and toss together. Set aside.

8Mix the sweetener of choice, vinegar and oil in a mixing cup. Stir.

9Pour solution over mixed Kraut and vegetables. Toss. Leave in refrigerator overnight.
