My Sauerkraut Recipe

1/2 head of cabbage

1 chopped spanish onion

2 cloves of garlic

3 rashers of bacon (rind removed)

Crushed Black Pepper

Sea salt

White Vinegar (2 tablespoons)

Chicken Stock (1/4 pint)


1Slice Cabbage finely.

2Chop Onion finely.

3Crush Garlic Cloves.

4Chop bacon rashers into small pieces.

5Fry off the onion and garlic, (do not brown).

6Add the chopped bacon.

7Saute gently until onions and garlic and bacon are cooked.

8Add cabbage and stir all ingredients together.

9Add salt and pepper.

10Add the vinegar and stir.

11Add chicken stock.

12Cook slowly in a covered pan for 20-25 minutes stirring occasionally. Allow to stand for 10 minutes before serving.
