My Sauerkraut Recipe

Ingredients

  • 1/2 head of cabbage
  • 1 chopped spanish onion
  • 2 cloves of garlic
  • 3 rashers of bacon (rind removed)
  • Crushed Black Pepper
  • Sea salt
  • White Vinegar (2 tablespoons)
  • Chicken Stock (1/4 pint)

Method

Step 1

Slice Cabbage finely.

Step 2

Chop Onion finely.

Step 3

Crush Garlic Cloves.

Step 4

Chop bacon rashers into small pieces.

Step 5

Fry off the onion and garlic, (do not brown).

Step 6

Add the chopped bacon.

Step 7

Saute gently until onions and garlic and bacon are cooked.

Step 8

Add cabbage and stir all ingredients together.

Step 9

Add salt and pepper.

Step 10

Add the vinegar and stir.

Step 11

Add chicken stock.

Step 12

Cook slowly in a covered pan for 20-25 minutes stirring occasionally. Allow to stand for 10 minutes before serving.
