Noodles and Sauerkraut

Ingredients

  • 2 medium onions, chopped
  • 2 TB extra virgin olive oil
  • 6 TB butter
  • 1 can (27 oz.) sauerkraut, rinsed and drained
  • 1 bag (12 o.z) medium-wide noodles, cooked and drained

Method

Step 1

Saute onions in oil plus 2 tablespoons of the butter over low heat until lightly browned 3 to 4 minutes

Step 2

Add sauerkraut to onions, mixing well.

Step 3

Boil noodles according to package directions but cook only for 5 minutes.

Step 4

Drain then add remaining 4 tablespoons butter to noodles.

Step 5

Add noodles to sauerkraut mixture, stirring to mix well.

Step 6

Spoon into 2 or 3 quart casserole or dish. Cover and refrigerate overnight.

Step 7

When ready to bake, remove from refrigerator and bring to room temperature for 30 minutes

Step 8

Preheat oven to 350 degrees.

Step 9

Dot casserole with butter.

Step 10

Bake in preheated oven 45 minutes.
