Polish Sausage &Sauerkraut

Ingredients

  • 2 lb. packages sourkraut
  • 1 1/2 lb fresh polish sausage (unsmoked)
  • 2-3 tbl spoons brown sugar
  • 2 tbl spoons caraway seed
  • 1 tbl spoon fennel seed (crushed)
  • beer to cover

Method

Step 1

Day l: boil sausage & discard water. Place sausage in frig.

Step 2

Day 2: Use a crock-pot. Open sourkraut; place in colander and wash THOROUGHLY FOR 5 MINUTES OR MORE.

Step 3

Place kraut in cooker; cut up sausage & put in cooker; add other ingredients.

Step 4

Cover with beer and start pot. Cook for at least 12 hours; better overnight.
