1Chop the bacon strips into 1/2 inch pieces and fry in a heavy skillet (cast iron preferred) over medium heat until crisp.
2Add the onion and fry until browned.
3Remove the bacon and onion with a slotted spoon and set aside.
4Drain all but 2 tablespoons of fat from the pan.
5Brown the country style ribs and the fresh bratwurst on all sides.
6Add sauerkraut, bacon and onion, covering the ribs and brats.
7Add the cider, cover and simmer over medium heat for 20 minutes
8Add the chopped apple and simmer uncovered for an additional 15 minutes until the apples are soft. Serve with mashed or boiled and buttered potatoes.
