1 9-inch pastry shell
1 tablespoon caraway seeds
8 oz corned beef, shredded (or 1 can corned beef, crumbled
1 tablespoon Dijon mustard
3/4 cup sauerkraut, squeezed and drained
2 cups Swiss cheese, grated
2 eggs, beaten
1 cup light cream
1 teaspoon grated onion
1/2 teaspoon dry mustard
1Preheat oven to 375 degrees.
2Sprinkle caraway seeds over kpie crust.
3Prick crust and bake for 7 minutes.
4Fill pie shell with corned beef.
5Spread mustard over meat; top with sauerkraut and cheese.
6Mix together eggs, cream, onion and dry mustard.
7Pour into pie shell and bake for 40 minutes.
8Let stand 5 minutes before cutting.
