Sauerkraut Pierogi Stuffing

Ingredients

  • 2 lb. sauerkraut
  • l arge onion, thinly sliced
  • Sugar to taste
  • Salt and pepper to taste
  • 1/2 lb. diced bacon, optional
  • 1/2 lb. diced salt pork, optional
  • 1/2 lb. butter, optional
  • Diced mushrooms, optional
  • Shredded cabbage

Method

Step 1

Rinse sauerkraut and drain well

Step 2

Saute sauerkraut along with the onions in butter, bacon or salt pork for approximately 20 minutes on low heat, in a covered pan, stirring from time to time.

Step 3

Add salt, pepper, sugar (mushrooms if desired).

Step 4

Cool.

Step 5

Add the shredded cabbage and mix well.
