Saurkraut Scrambled Eggs

Ingredients

2 eggs

1T olive oil

1 handfull well drained kraut

1 pickle, diced

2T diced onion

1 clove diced garlic

1/4 c shredded cheese (cheddar, pepperjack, and swiss all work well)

Directions

1Heat olive oil in pan

2Saute onions and garlic until transluscent

3Add Kraut - make sure as much juice as possible is squeezed out

4Brown onions, garlic, and kraut just a little while scrambling the eggs and cheese together

5Add scrambled eggs and diced pickle

6Stir occasionally with your spatula so it doesn't burn.
