Sausage, Sauerkraut and Bean Soup

Ingredients

  • 4 cans (14-1/2 oz. ea.) chicken broth
  • 1 lb. kielbasa, cut in half lengthwise and then sliced
  • 1 can (15 oz.) cannellini beans, rinsed and drained
  • 1 can (15 oz.) Frank's Kraut, drained
  • 4 medium carrots, peeled and diced
  • 3 celery ribs, sliced
  • 1 large onion, diced
  • 1 tsp. dried thyme
  • 1 can (14-1/2 oz.) diced tomatoes, undrained

Method

Step 1

Mix all ingredients, except tomatoes, in a 5 to 6-quart crock pot. Cover and cook on low-heat setting for 6 to 8 hours. Taste for seasoning Add salt and pepper if needed. Stir in tomatoes; cover and cook on high-heat setting until heated through, about 15 minutes more.
