Tempeh (sold in health food stores, Whole Foods, etc)
Thousand Island Dressing
Good Swiss Cheese
1Cut the tempeh in half lengthwise, then in quarters
2Heat oil in a skillet; add tempeh and fry until golden brown on both sides; remove from skillet.
3Butter two sides of rye bread.
4Put the butter side down into the skillet, pile the tempeh, and swiss cheese on top, and put the butter side facing up of the other piece of rye.
5(like you're making a grilled cheese sandwich).
6Heat until the bread becomes golden brown, or the cheese melts.
7Remove the sandwich, peel apart and add in the saurkraut and a generous portion of thousand island dressing.
8Serve with a good dill pickle, celery sticks and/or an apple.
