Chicken Parmesan
2 pounds chicken cutlets
2 eggs, beaten
1 cup bread crumbs
1 14 oz can sauerkraut
1 15 ½ oz Tomato sauce
Oil
¼ teaspoon each oregano, sage, thyme and basil
1 ½ cups mozzarella cheese
¼ cup grated parmesan cheese
- Pound chick until thin.
Combine herbs and bread crumbs.
- Dip chicken into eggs then
into breadcrumbs.
- Bake in 400-degree oven until
done.
- Pour sauce on top of chicken
then cover with sauerkraut.
- Sprinkle with Parmesan cheese
and bake until heated in a 350-degree oven.
- Top with Mozzarella and bake
about 5 more minutes or until cheese is melted.
