Tempeh Reuben (vegetarian)

Tempeh (sold in health food stores, Whole Foods, etc)
Oil
Rye bread
Sauerkraut
Thousand Island Dressing
Good Swiss Cheese

  1. Cut the tempeh in half lengthwise, then in quarters
     
  2. Heat oil in a skillet; add tempeh and fry until golden brown on both sides; remove from skillet.
     
  3. Butter two sides of rye bread. Put the butter side down into the skillet, pile the tempeh, and swiss cheese on top, and put the butter side facing up of the other piece of rye. (like you're making a grilled cheese sandwich).
     
  4. Heat until the bread becomes golden brown, or the cheese melts.
     
  5. Remove the sandwich, peel apart and add in the saurkraut and a generous portion of thousand island dressing.
     
  6. Serve with a good dill pickle, celery sticks and/or an apple.

Cook Time: About 25 minutes
