Thunderbolt Cake
Servings: 12

2 1/4 cup flour
1 tsp. baking powder
2/3 cup shortening or butter (can use Smart Balance)
3 eggs or 3/4 cup egg substitute
1/4 tsp. salt
1 cup water
1 tsp baking soda
1 1/2 cup sugar
1 1/4 tsp. vanilla
1/2 cup cocoa
1/2-2/3 cup sauerkraut, rinsed, drained and chopped

  1. Cream together sugar, shortening; add eggs and mix well.
     
  2. Add vanilla, salt, and cocoa.
     
  3. In a separate bowl, sift together flour, baking powder and soda.
     
  4. Alternately add flour mixture and water to creamed mixture.
     
  5. Bake in a greased and floured 13x9 pan at 375 degrees for 35-45 minutes(Check for doneness at 35 minutes). Cool before frosting.
     
  6. This is a very moist and chewy cake.
     
  7. You can add your favorite chocolate frosting or leave plain.
