Crock Pot Ribs and Sauerkraut
Servings: 4

4 Western style pork ribs (lean)
1 14 oz. can sauerkraut
5 or 6 small redskin potatoes (unpeeled)
1 14 oz. can diced tomatoes (I zap in blender)
Water (rinse out tomato can)
Pepper (I use seasoned pepper)

  1. Rinse and drain kraut. Put in the bottom of crock pot. Cover with ribs, potatoes, pepper, tomatoes & water. Turn crock pot on high. Go to work. Come home to a wonderful aroma.
     
  2. Break up meat and potatoes; remove bones. Breaking up the potatoes absorbs a little of the liquid. It will be a little soupy -- we eat it in bowls.
     

Prep Time: 10 minutes
Cook Time: 8 hours or all day
