Mom's Sauerkraut & Rice

1 medium onion, chopped
2 cloves of minced garlic
1 tbsp oil
1 lb ground beef
1/2 tsp salt
1/4 tsp pepper
1 cup long grain rice
1 - 28 oz can of sauerkraut, drained
- In a heavy bottomed pot, on medium heat, saute the garlic, and onion, in 1 tbsp of oil, for a couple of minutes.
- Add the ground beef and fry until no pink remains.
- Add the rice, stir.
- Add enough hot water to just cover the beef/rice mixture.
- Add the sauerkraut, cover and simmer on low until all the liquid is absorbed, approximately 45 minutes.
- This is good sereved with spaetzle (a home-made noodle from southern Germany)
