Dumplings with Sauerkraut & pork

3# pork roast
For roast: Garlic powder/salt/paprika/salt & pepper/carraway seeds
For Dumplings: 1c flour; 2 eggs
For Sauerkraut: Carraway seeds, Kitchen Bouquet (for browning)

  1. Roast pork in 350 degree oven approximately 2-3 hrs (or as recomended in cooking pork charts. Sprinkle all dry ingredients over roast & cover & bake.
     
  2. For dumplings: mix flour & eggs & enough water into a 1 cup measuring container to equal 1 c liquid. Start to Boil a pot w/ water add pinch salt to water.
     
  3. After water comes to rolling boil, spoon out dough mixture to make about a Tablespoon and drop in boiling water. Do this until all dough is gone...let boil about 20 mins (uncovered). Use a serated spoon to transfer them from pot to baking dish.
     
  4. Put sauerkraut in baking dish pour some kitchen bouquet into it to make it look brown. Put roast on top and add dumplings around the roast. Cover and bake about 10 mins more. ENJOY!
