Simple Sauerkraut

Common white cabbage
Salt
Apple Cider Vinegar
Black Pepper
Cloves
White sugar

  1. Slice cabbage into fine strips.
     
  2. Place in saucepan of sufficient size.
     
  3. Add ACV to give about 1mm (1/16in) cover of pan bottom.
     
  4. Add similar amount of water.
     
  5. Add salt and a small amount of pepper and several cloves.
     
  6. Place over low heat and cover with lid.
     
  7. Render gently until cabbage 'tender' and balance taste with sugar or ACV.
     
  8. Let it cool and go for it. Yumm!!
     

Prep Time: Half hour
Cook Time: As long as it takes
