Axis Sauerkraut Sandwiches Servings: 1

1 handful of shredded mozzarella cheese
1 handful of sauerkraut: rinsed, drained
2 slices pumpernickel bread
Ground black pepper, coarse or fine
- First take all the cheese and put it on the bread. This should be a lot of
cheese. Then cover it with black pepper.. a lot of black pepper, enough
so you can taste it while you are applying it to the cheese. Coarse-ground
pepper tastes the best but use a shade less of it. Rinse and drain a
liberal handful of 'kraut. If it's too wet then the sandwich will not be
good. If it is not rinsed then the 'kraut will be too strong. Once that is
done, put it on the sandwich.
- Then, heat the sandwich minus the top piece
of bread. When the cheese gets going, take it out. Attach the top piece of
bread, allow several minutes to cool, and eat. If you want, this can be
made as a cold sandwich. Another variation is to melt the cheese and pepper
on the bread, and then dress with cold 'kraut. Use a broiler to heat bigger
sandwiches more evenly, a toaster oven works well, and so does a microwave.
