Sausage, Sauerkraut and Bean Soup Servings: 8

4 cans (14-1/2 oz. ea.) chicken broth
1 lb. kielbasa, cut in half lengthwise and then sliced
1 can (15 oz.) cannellini beans, rinsed and drained
1 can (15 oz.) Frank's Kraut, drained
4 medium carrots, peeled and diced
3 celery ribs, sliced
1 large onion, diced
1 tsp. dried thyme
1 can (14-1/2 oz.) diced tomatoes, undrained
- Mix all ingredients, except tomatoes, in a 5 to 6-quart crock pot. Cover and cook on low-heat setting for 6 to 8 hours.
Taste for seasoning Add salt and pepper if needed. Stir in tomatoes; cover and cook on high-heat setting until heated through, about 15 minutes more.
