Bob's Ribs and Kraut

By Bob Hebert, Bend, Oregon

Ingredients

1 slab of pork ribs (not baby backs) cut into individual servings
1 can or jar of sauerkraut
1 medium onion, sliced
Salt and pepper to taste
Granulated garlic to taste
1/2 bottle of beer
Sprinkle of caraway seeds
1 tbs brown sugar

Directions

Season ribs with salt, pepper and garlic. Brown uncovered in oven on rack so fat drains away or brown on BBQ grill. Do not cook completely. Place half the kraut in baking dish, top with ribs, rest of the kraut, onions, caraway seeds, and brown sugar. Add beer and cover. Bake for 1 hour at 375 degrees or until pork is "fall off the bone tender". (Browning the ribs gives a much better flavor).

Time to prepare

30 minutes. Cook 1 hour.
