Polish Sausage &Sauerkraut |

Ingredients
2 lb. packages sourkraut
1 1/2 lb fresh polish sausage (unsmoked)
2-3 tbl spoons brown sugar
2 tbl spoons caraway seed
1 tbl spoon fennel seed (crushed)
beer to cover
Directions
Day l: boil sausage & discard water. Place sausage in frig.
Day 2: Use a crock-pot. Open sourkraut; place in colander and wash THOROUGHLY FOR 5 MINUTES OR MORE.
Place kraut in cooker; cut up sausage & put in cooker; add other ingredients.
Cover with beer and start pot. Cook for at least 12 hours; better overnight.
