Lo Cal Spicy Kraut with Turkey Sausage |

Ingredients
2 pounds of lean turkey sausage (or sausage of choice)
3 1/2 cups sauerkraut
1 cup finely chopped unpared apple
1 cup shredded carrot
3 cups spicy tomato juice
1/4 - 1/2 cup picante sauce (or salsa)
4 tablespoons brown sugar
2 teaspoons caraway seed
2 cloves of garlic (minced)
1 medium onion (diced)
Pinch of red pepper or habanero pepper flakes (if desired)
Directions
1) Season sausages, if desired, with Mrs. Dash (or similar seasoning) and brown in scant amount of cooking oil.
2) Combine kraut (including liquid) with remaining ingredients; spoon over and around sausages in roasting pan (can also be simmered in pot on stovetop).
3)Heat for 1 3/4 hours at 375 degrees or simmer on stovetop until sausage is cooked through, basting with juices several times during the last hour.
4) Ribs, chops or loin roast may be substituted for sausages
