Sarma Hot Dish

Ingredients

8 slices bacon, sauteed and crumbled
1-1/2 lb. ground beef or ham, browned and crumbed
1 medium onion, diced
1 clove garlic, minced
Salt and pepper
1 small head cabbage, coarsely chopped
1 cup uncooked long grain rice
2 cups sauerkraut with juice
1 qt. (32 oz.) tomato juice or V-8 juice
2 cans tomato soup, undiluted

Directions

Saute bacon, drain and crumble. Remove from pan and set aside. Add and saute until browned: beef or ham onion Add and mix well: rice bacon Grease a large cassereole with butter. Line casserole bottom with 1/2" chopped cabbage. Spread meat on top of the cabbage. Layer meat with the sauerkraut. Continue layering with remaining ingredients. Mix tomato juice and tomato soup together and pour over casserole. Cover and bake at 350 degrees F., for 2 to 2-1/2 hours. During the baking time, check to see if there is enough liquid for the rice to absorb as it cooks. If there is excess liquid, remove and discard.
