BOB'S BAVARIAN SAUERKRAUT

Ingredients

3 LBS. SAUERKRAUT
1 CUP DICED RAW BACON
1 CUP DICED ONION
1/2 CUP BROWN SUGER
1/3 CUP WHOLE CARAWAY SEEDS
1 MEDIUM POTATO,PEELED,FINELY GRATED
WATER TO THIN, IF NECESSARY

Directions

RINSE SAUERKRAUT WELL UNDER COLD WATER.

IN A 6-QUART SAUCEPAN ,BROWN BACON AND ONION;ADD SAUERKRAUT,BROWN SUGER,CARAWAY SEEDS AND POTATO.

COVER WITH COLD WATER. BRING TO A BOIL,REDUCE HEAT,SIMMER 1 1/2 HOURS,STIRRING OCCASIONALLY. IF NECESSARY ADD WATER TO KEEP SAUERKRAUT FROM BURNING.
