Stuffed Meat Loaf

Ingredients

1 lb. ground beef, veal or pork
1 egg, beaten
1 slice bread (preferably rye or whole wheat), toasted and made into crumbs
1/4 cup onion, finely chopped
2 Tbsp relish
2 Tbsp creamy salad dressing (e.g., Thousand Island)
1-2 tsp (as desired) Worcestershire sauce
1/4 tsp pepper
1/2 cup drained sauerkraut
3/4 cup grated swiss, cheddar, or mozzarella cheese

Directions

Preheat oven to 350 degrees Fahrenheit.

Mix together all ingredients except sauerkraut and cheese.

Spread mixture on a piece of wax paper and form into a 6 x 8 inch rectange.

Spread sauerkraut over rectangle, leaving a 1 inch border from sides; sprinkle half the grated cheese on top of the sauerkraut.

Starting from one of the short ends, roll the rectangle to make a loaf. Press the open ends to seal.

Transfer loaf to roasting pan or standard bread pan and bake for 30 minutes.

Sprinkle loaf with remaining cheese and continue baking until melted, approximately 2-3 minutes.

Time to prepare

15-20 minutes. Cook Time: 35 minutes .
