Saurkraut Scrambled Eggs |

Ingredients
2 eggs
1T olive oil
1 handfull well drained kraut
1 pickle, diced
2T diced onion
1 clove diced garlic
1/4 c shredded cheese (cheddar, pepperjack, and swiss all work well)
Directions
Heat olive oil in pan
Saute onions and garlic until transluscent
Add Kraut - make sure as much juice as possible is squeezed out
Brown onions, garlic, and kraut just a little while scrambling the eggs and cheese together
Add scrambled eggs and diced pickle
Stir occasionally with your spatula so it doesn't burn.
Enjoy!!

Serve either on toasted rye or pumpernickle bread or add 1/2 c cooked and cooled brown rice to the pan right after the onions, garlic, & kraut starts to brown.
