Croatian Bean Soup

By Stacie Dasher, Pittsburgh, PA

Ingredients

1 bag beans (navy, great Northern, etc)
2 or 3 ham hocks (or other desired pork or ham)
1 large can sauerkraut
Potatoes (optional)
Carrots (optional)
Vinegar to taste
Ground pepper to taste
Water

Directions

Soak beans overnight, rinse, put in pot, and cover with water.

Add meat to pot. If using potatoes or carrots, add to pot.

Add sauerkraut. I always drain it, but if you don't, you might not need the vinegar.

Simmer for several hours until soup has thickened.

Add vinegar and lots of pepper to taste.

Time to prepare

Overnight. Cook Time: Several hours
